- Preheat the oven to 180ºC and place a non-stick baking tray inside to heat up.
- Cut the sweet potatoes into chips, tip onto the hot tray and drizzle with a teaspoon of olive oil. Toss and season with a pinch of salt and black pepper. Roast in the oven for 10 minutes.
- Turn the chips and move to one side of the tray. Add the onions and peppers to the other side and drizzle over a teaspoon of olive oil. Return the tray to the oven and roast for another 15 minutes or until everything is roasted and golden. At the same time, pop the cod Kyiv tray in the oven and cook according to the pack instructions.
- Divide the sweet potato chips and roasted vegetables between 2 plates and top each one with a cod Kyiv.
This is perfect with a good dollop of garlic mayo!
