Fred's roast salmon fillet with roasted veg and cous cous

  1. Preheat oven to 200°C (fan 180°C)
  2. Toss all veg with 1 tbsp olive oil, herbs, salt, and pepper
  3. Spread on a tray and roast for 20–25 minutes, turning halfway, until soft and slightly charred
  4. Meanwhile, rub the salmon with 1-2 tbsp olive oil, paprika, garlic, lemon zest, salt, and pepper
  5. After the veg has been in for 10 minutes, place the salmon on the same tray (or a separate one)
  6. Roast for 10–12 minutes until just cooked through and flaky
  7. Meanwhile, place couscous in a bowl with a pinch of salt
  8. Pour over hot stock, cover, and let sit for 5 minutes
  9. Fluff with a fork, then stir in 1 tbsp olive oil/butter, lemon juice, and pepper
  10. Plate up & serve with tzatziki

Pan-fry skin side down for restaurant quality extra crispy skin!

What you’ll need:

  • 2 salmon fillets-250g
  • Olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ lemon (zest & juice)
  • 1 courgette, sliced
  • 1 red bell pepper, chopped
  • 1 small red onion, cut into wedges
  • 1 carrot, sliced
  • 1 tsp dried herbs
  • 120g couscous
  • 150ml hot vegetable or chicken stock
  • Salt & pepper
  • Tzatziki, to serve
