Fred’s pan-fried sea bream with an avocado and mango salsa

  1. Cook your rice as you normally would. Boil it, steam it… whatever you want.

  2. Chuck all your diced fruit and veggies together with the lime juice and give them a good mix.

  3. Pan fry your sea bream until nicely cooked (follow the instructions on the back of the pack if you need a helping hand).

This dish is beautiful on a hot summer’s day. Seriously refreshing. For a real treat, why not try cooking your bream fillets on the barbecue? The smokiness works so well with the fruity salsa.

What you’ll need:

  • 1 pack of Fred’s stunning sea bream fillets
  • 1 cup rice
  • 1 ripe mango, cut into small squares
  • 1/2 red chilli, very finely chopped
  • 1 ripe avocado, flesh cut into small squares
  • 2 tomatoes, deseeded and cut into small squares
  • Small bunch coriander, chopped
  • 1 lime, juiced
